What coffee-to-water ratio should I use for V60?

Start between 1:16 and 1:17. In practice: 15 g of coffee to 250 ml of water, which is 1:16.7 and a good single-cup starting point.

What the ratio controls

The ratio mostly sets body and strength — not whether the cup tastes sour or bitter. Grind size sets that. Keeping the two apart matters: if the cup is sour, using less water is not the fix, grinding finer is.

Which way to move it

Want a denser, fuller cup? Go down to 1:15. Want something lighter and more tea-like? Go up to 1:18. You rarely need to leave that range.

Other methods

Chemex 1:16–1:17, French press 1:15–1:16, AeroPress varies wildly but around 1:14 is a common start. Espresso is its own world, where the ratio is talked about as roughly 1:2.

Use a scale

Measuring by spoon does not work; the volume of ground coffee changes with grind size and bean density. A ratio only means something in grams.
