Why is my coffee weak and watery?

A watery cup is usually a ratio problem: there is not enough coffee. Start at 1:16–1:17 — 15 g of coffee to 250 ml of water — then look at the grind.

Weak, or sour?

These get confused, and they have different fixes. A weak cup tastes right but faint, like water. A sour cup tastes sharp and hollow. Weak points at dose and ratio; sour points at grind.

Start with a scale

Measuring by the spoon does not work: the same spoon holds a different weight depending on how coarse the coffee is. A kitchen scale settles it once.

Then the grind

If the dose is right and the cup is still weak, the grind is too coarse — the water runs past the coffee instead of through it. Go two or three clicks finer and brew the same coffee again.

Stop the water escaping

Water that slips down the side of the filter never touches the coffee and dilutes the cup. Rinse the paper first, keep the bed flat, and pour in circles through the middle without digging into the edges.
