Why is my coffee different every time?

Because you are not actually brewing it the same way. Without weighing, checking the water temperature and timing the brew, every morning is a different recipe without you noticing.

The variables hide each other

When grind, dose, water, temperature and time all move at once, there is no way to tell which change fixed the cup. It works one morning, fails the next, and nobody knows what was different.

The coffee is not constant either

Even one bag changes: as the days pass since roasting, there is less gas and the same setting gives a different result. Your setting drifting slightly is normal, not a failure.

A setting you did not write down is a setting you do not have

When you catch a cup that works, write the numbers down. You think you will remember, but three days later neither the grind nor the dose comes back, and you start over.

One variable at a time

Change two things at once and, even if the cup improves, you will not learn which one did it. It looks slow. It is the only fast way.
